Roasted Turkey or Grilled Chicken Breast

if you are immunocompromised at all, use store bought mayo
whole grain bread
if available or your favorite tomato
MAYONNAISE RECIPE FROM MICHAEL RUHLMAN
large egg yolk from a pasteurized egg
Whisk together water, lemon juice, salt, and egg yolk on a bowl set on a towel.
Going very slowly (pouring drops at a time) add the oil to the mixture while whisking continuously until all the oil is incorporated.
DIRECTIONS FOR MAKING SANDWICH:
Toast bread. Immediately after toasting spread with homemade mayonnaise
Slice meat thinly and uniformly and lay on the bread
Place a large leaf of lettuce on top of the meat
Top with a slice of tomato
Put a layer of mayo on top of the tomato and a sprinkle of pepper
Put the last slice of bread on top
For a lower potassium modification, omit avocado
