Sheet Pan Chicken With Olive, Zucchini And Onions

Ingredients
  

  • 4 zucchinis sliced (or 2 for lower potassium)
  • 1 white onion coarsely chopped
  • 1 red onion coarsely chopped
  • 15 cherry or grape tomatoes
  • 1/3 cup black olives
  • 1 cup Sodium-Free Chicken Broth
  • 1 tbsp dried oregano
  • Fresh parsley
  • salt and pepper
  • 4 chicken thighs bone-in, skin on

Instructions
 

  • Preheat oven to 350°F.
  • Place the zucchini slices, chopped onions, cherry tomatoes and olives on a baking sheet or in an ovenproof dish.
  • Pour 1/3 cup of broth, salt, pepper and oregano over the vegetables. Mix together.
  • Add the chicken pieces on top and pour some broth over the chicken pieces. Reserve ⅓ cup of broth.
  • Bake for 1 hour to 1 hour and 15 minutes. During cooking keep the chicken moist by adding a little chicken broth to the pan. Remove when chicken is cooked through.
  • Serve by plating the chicken topped with the roasted vegetables

Notes

To lower the potassium a little bit use only 2 zucchini. It will still be a high potassium dish.
