Even though carbohydrates get a lot of negative press, I believe they can be incorporated as part of a healthy diet. This is especially true if you are choosing whole grains like barley, farro, quinoa, and whole grain couscous.
I make these grains at home using a special toasting technique. This technique adds a depth of flavor and, because you are creating a more flavorful dish due to the toasting, you do not have to add as much salt or fat to the final product.
