  • 1 orange
  • 1 clove
  • 1 star anise
  • 1 cinnamon stick plus more for garnish, optional
  • 3 ripe bartlett pears cored and chopped, plus slices for garnish, optional*
  • Juice of half a lemon
  • 1 tablespoon honey
  • ¼ cup water
  • For the Mocktail:
  • 4 ounces pear puree*
  • 2 ounces unsweetened cranberry juice
  • Sparkling water plain or flavor of choice
  • Turbinado sugar for garnish, optional


  • Using a vegetable peeler, remove 3 wide strips of orange peel and pierce one strip with the clove. Reserve one peel for garnish and use remaining orange for another use. Place the remaining orange peels in a medium saucepan with the star anise, cinnamon stick, pears, lemon juice, honey and water over medium high heat.
    Bring mixture to a boil and reduce to a low simmer. Simmer until the pears soften and just start to break down, about 10 minutes. Set aside to cool.
  • Remove clove, star anise and cinnamon stick. Transfer pear mixture to a blender or food processor and process until smooth.
  • For each mocktail, fill a highball glass with ice.
    Combine pear puree and cranberry juice in a shaker or glass jar and shake thoroughly to combine. Pour pear mixture over ice and top with sparkling water. Garnish with a slice of pear, orange peel and cinnamon stick, if desired.
    Optional garnish: Rim glass with a lemon or orange and turbinado sugar.
  • RECIPE TIP: Two cups of unsweetened pear juice can be substituted for fresh pear puree. Simmer juice for 5 minutes with orange peel, clove, star anise, cinnamon stick and 2 tablespoon honey. Strain and proceed to step 3.
