  • 1 cup diced onions
  • 1 cup diced tomatoes
  • 1/2 Chopped cilantro
  • 2-3 seeded and diced jalapenos
  • Juice of 1 lime

For a lower potassium modification, substitute roasted red peppers for tomatoes
