Healthy(ish) Buffalo Chicken Dip
Ingredients
- 8 ounces softened lower fat cream cheese or Neufchatel
- 8 ounces soft tofu
- 2 tablespoon white vinegar
- 1 tablespoon paprika
- 2 tablespoons of your favorite low sodium hot sauce 100 mg or less per serving
- 3/4 teaspoon of nutritional yeast
- 2 cups shredded chicken breast
- Fresh veggies such as lightly steamed broccoli and cauliflower, carrots, celery, cucumber
Instructions
- Preheat oven to 350º
- Mix all ingredients (except chicken and fresh vegetables) in a food processor and process 2-3 minutes until smooth
- Combine sauce and shredded chicken breast in a oven proof dish
- Heat 20-25 minutes until bubbly
- Serve with veggies and whole wheat pita bread
Notes
For a lower carbohydrate and more diabetic friendly version, eat only a 1/2 cup portion
