13 Dec Healthier Bundt Cake
For a lighter, less sweet version, you can serve the icing on the side and let each person add as much, or as little, as they want.
It can also be fun to have a few bowls of red fruits, pomegranate seeds, strawberries, raspberries, available for toppings.
Ingredients
- 1/2 cup Skyr yogurt
- 3 eggs
- 1/4 cup coconut oil
- 1/2 cup coconut sugar
- 1 1/2 cup whole wheat flour
- 1 teaspoon baking powder
- 1 cup icing sugar
- 1 egg white
- 1/2 teaspoon lemon juice
- Berries to decorate
Instructions
- Preheat the oven to 350ºF.
- Prepare a 7-inch Bundt cake pan by adding a little oil and flour.
- In a large bowl, mix the Skyr yogurt, eggs, coconut oil, vanilla and sugar. Beat with a whisk until the mixture becomes a little frothy.
- In a separate bowl, mix the whole wheat flour with the baking powder. Add the dry ingredients to the wet ingredients and mix to obtain a creamy texture. Pour into your pan.
- Cook in the oven for 45 minutes. When finished, remove the cake from the oven and let sit for 5 minutes. Remove the cake from the mold and let cool for 30 minutes.
- To prepare the icing, pour the icing sugar into a bowl and add the egg white mixture, stirring with a spatula as you pour. Add the lemon juice and continue mixing until you have a nice smooth icing. Pour the frosting on top of the cake.
- Decorate the top of the cakes with fresh berries or other fruits that you have.
