Ingredients
  

  • 1 cup All-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 cup coconut sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger powder
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 cup oat milk
  • 1/3 cup coconut oil melted
  • 1 tablespoon maple syrup
  • 2 cups vanilla Skyr yogurt
  • Red currants

Instructions
 

  • Preheat the oven to 350ºF.
  • Add the two flours, coconut sugar, cinnamon, ginger powder, ground nutmeg, baking powder and salt to a bowl. Mix.
  • In another bowl, beat the oat milk, eggs, coconut oil and maple syrup with a whisk. Pour the wet mixture into the dry mixture. Stir to combine.
  • Divid batter into 12 muffin molds and bake for 20 minutes.
  • To serve, add a teaspoon of vanilla Skyr yogurt on top and a few currants.
