  • 2 heads of romaine lettuce chopped
  • 1/3 cup sundried tomato
  • 1 15 ounce can of low sodium chickpeas rinsed and drained
  • 1/2 medium sized cucumber cut in half lengthwise and then sliced into thin half moons
  • 1/3 cup shaved parmesan cheese
  • 3 tablespoons olive oil or oil from the jar of dried tomatoes
  • 2 tablespoons red wine vinegar
  • 1 tablespoon dijon mustard
  • 2 tablespoons dried oregano
  • Freshly ground pepper


  • Mix the Dijon mustard, red wine vinegar and pepper in a medium bowl. Whisk in the olive oil.
  • Combine all other ingredients in a large bowl and mix well. Add the dressing and mix again. Serve in plates or medium sized bowls.
