08 Feb Flourless Dark Chocolate Cake
This Flourless Dark Chocolate Cake is not very sweet, BUT very strong in chocolate, which helps keep the sugar content low. You can also add a little more coconut sugar or a sugar substitute if you want it sweeter.
If you melt the chocolate in the microwave, do 30 second increments, then mix and start again until everything is melted.
NOTE: If you try to melt it by heating it for several minutes without stopping to mix, the chocolate will burn.
Ingredients
- 8 ounces dark chocolate at least 70% cocoa
- 6 tablespoons coconut oil
- 6 large eggs separate
- 1/2 cup coconut sugar
- Powdered sugar optional
Instructions
- Preheat the oven to 320ºF.
- Melt the coconut oil with the dark chocolate in a double boiler or in the microwave. Stir regularly to obtain a smooth mixture. Leave to cool for a few minutes.
- Separate the whites from the yolks and beat the whites until firm. Add the coconut sugar a little bit at a time to the egg whites and continue beating.
- Gradually add the egg yolks to the coconut oil and chocolate mix. The mixture should thicken.
- Slowly add the whisked egg whites and sugar mix to the chocolate. Mix together without breaking the egg whites.
- Pour into a 9-inch Springform pan. Bake for 40 minutes.
- Let the cake cool for 15 minutes before unmolding it. Do not unmold it too soon. If the cake has puffed up and cracked, that's normal, it will shrink as it cools.
- Add icing or sugar on the cake if you like.
