Citrus Olive Oil Upside Down Cake

Citrus Olive Oil Upside Down Cake

For this week’s video I want to share with you all this amazing, fresh dessert recipe for my “Citrus Olive Oil Upside Down Cake”.

I was inspired by Mediterranean and South Asian cuisines, so I used olive oil instead of butter and added pistachio nuts and cardamom for flavor, texture, and scent. But the real star of the show here is the mandarin oranges. This dessert tastes decadent, but it is low calorie and low fat. A slice is just under 200 calories.

*Note: Use a sharp knife and take your time when slicing the mandarin oranges, the thinner the better. This cake also pairs well with almonds or walnuts in place of the pistachio nuts. This easy and tasty dessert will be a great addition to your table.
