  • ¾ cup EVOO
  • 2 cups packed arugula
  • 1 garlic clove pounded with a pinch of salt
  • 3 1/2 ounces of grated parmesan cheese
  • ½ cup walnuts lightly toasted and pounded


  • Chop the arugula
  • Pour olive oil and arugula into a blender and pulse until the arugula is chopped but not totally disintegrated
  • Lightly toast walnuts and pound until granulated
  • Mash garlic and a pinch of salt together
  • Pour the arugula/oil combination, garlic mixture, parmesan cheese and walnuts into a medium bowl and stir to combine
  • Add salt or garlic as needed
