5-Ingredient Arugula Pesto

5-INGREDIENT ARUGULA PESTO
From Samin Nosrat – Salt Fat Acid Heat

INGREDIENTS:
¾ cup EVOO
2 cups packed arugula
1 garlic clove pounded with a pinch of salt
3 1/2 ounces of grated parmesan cheese
½ cup walnuts, lightly toasted and pounded

DIRECTIONS:
1.  Chop the arugula
2.  Pour olive oil and arugula into a blender and pulse until the arugula is chopped but not totally disintegrated
3. Lightly toast walnuts and pound until granulated
4. Mash garlic and a pinch of salt together
5. Pour the arugula/oil combination, garlic mixture, parmesan cheese and walnuts into a medium bowl and stir to combine
6. Add salt or garlic as needed
