5-Ingredient Arugula Pesto
Ingredients
- ¾ cup EVOO
- 2 cups packed arugula
- 1 garlic clove pounded with a pinch of salt
- 3 1/2 ounces of grated parmesan cheese
- ½ cup walnuts lightly toasted and pounded
Instructions
- Chop the arugula
- Pour olive oil and arugula into a blender and pulse until the arugula is chopped but not totally disintegrated
- Lightly toast walnuts and pound until granulated
- Mash garlic and a pinch of salt together
- Pour the arugula/oil combination, garlic mixture, parmesan cheese and walnuts into a medium bowl and stir to combine
- Add salt or garlic as needed
