Roasted Turkey or Grilled Chicken Breast
Ingredients
- Homemade mayonnaise if you are immunocompromised at all, use store bought mayo
- Thin whole grain bread
- Heirloom Tomato if available or your favorite tomato
- Romaine lettuce
- Sweet onion
- Pepper
- MAYONNAISE RECIPE FROM MICHAEL RUHLMAN
- INGREDIENTS:
- 1 tsp water
- 2 teaspoons lemon juice
- 1/8 tsp kosher salt
- 1 large egg yolk from a pasteurized egg
- ½ cup canola oil
- ½ cup olive oil
Instructions
- Whisk together water, lemon juice, salt, and egg yolk on a bowl set on a towel.
- Going very slowly (pouring drops at a time) add the oil to the mixture while whisking continuously until all the oil is incorporated.
- DIRECTIONS FOR MAKING SANDWICH:
- Toast bread. Immediately after toasting spread with homemade mayonnaise
- Slice meat thinly and uniformly and lay on the bread
- Place a large leaf of lettuce on top of the meat
- Top with a slice of tomato
- Put a layer of mayo on top of the tomato and a sprinkle of pepper
- Add onion
- Put the last slice of bread on top
- Slice diagonally
Notes
For a lower potassium modification, omit avocado

The Wrap
Ingredients
- Whole grain tortilla
- Spreadable goat cheese
- Sliced cucumber
- ½ Avocado
- Microgreens
- Extra Virgin Olive Oil & Balsamic Vinegar
Instructions
- Spread goat cheese on ½ of the tortilla
- Slice avocado and place over the goat cheese
- Top with cucumber and microgreens
- Sprinkle with Evoo and vinegar
- Roll and slice in half
Notes
